French 75

1oz London Dry Gin

.5oz Lemon Juice

.5oz Simple Syrup

Sparkling Wine

Shake gin, lemon juice and simple with ice. Double strain into a Champaign flute or white wine glass and top with sparkling wine.

Old Cuban

1.5oz Aged Rum

.75oz Lime Juice

1oz Simple Syrup

2 Dashes Angostura Bitters

6-8 Mint Leaves

2oz Dry Sparkling Wine

In a shaker, combine all ingredients except the sparkling wine. Shake with ice. Double-strain into a chilled glass, top with sparkling wine and garnish with a single mint leaf.

Fantastic cocktail, but a bit on the sweet side, next time I would use a little less simple syrup.

Aperol Spritz

3oz Prosecco

2oz Aperol

1oz Soda Water

Add all ingredients to a wine glass or tumbler with a few cubes of ice. Stir and garnish with a portion of orange wheel.
